Romance of the countryside

Pasta the romantic way

Pasta the romantic way
Oh, love. There's no better place to find it than amidst the bustling night life of a big city, where partying economics students and stylish graduates of the same year carry their courtship into the wee hours of the morning. In search of true love, many singles move from the villages to the big city, betting on finding a marriage partner there.
Fortunately, singles are not completely luckless in a less flamboyant city such as Wageningen, according to Pieter Gautier, professor of macro-economics at the VU University of Amsterdam. The presence of an applied sciences university or a research university in the countryside attracts people with similar outlooks. Even the most introverted entomologist running after flies could suddenly bump into his perfect partner.
In Wageningen, the chances are big that this partner turns out to live in the same house as your best friend, or is your roommate's co-worker on an executive board. In that case, every attempted advance will be relentlessly followed by two-thirds of the Wageningen population. Should you finally meet the ideal marriage partner, head for a quiet spot along the Rhine and slurp your way towards each other with this pasta full of aphrodisiac.
Pasta the romantic way
Preparation time: 30 minutes
Ingredients for 4 persons:
350 g spaghetti
2 stalks of curly parsley, chopped finely
2 garlic cloves, chopped finely
400 g button mushrooms, sliced thinly
20 ml white wine
2 tablespoons (imitation) caviar
1 tablespoon tomato puree
Hit a generous dash of olive oil in a pan with a thick base. Fry the mushrooms and half of the curly parsley and garlic for twenty minutes above low heat. Stirring continuously, add the wine, a little at a time. Add salt and pepper to taste.
Mix the rest of the curly parsley and garlic with the caviar. Cook the spaghetti till soft to the bite and add the tomato puree into the cooking water in the last two minutes. Drain off the water, stir the mushroom mixture into the spaghetti and garnish with the caviar.
