Low-salt sufu requires better hygiene


Sufu, a Chinese fermented soya spread, contains more salt than is generally
good for the blood pressure. Wageningen researchers think it is possible
however to drastically reduce the amount of salt in sufu, but only if the
producers become more hygienic in their processing.
