European project on acrylamide starts

The EU-project Heatox has received the go-ahead from Brussels.
Europe will spend more than four million euros over the next three years on research into the carcinogenic compound acrylamide in food. Three Wageningen groups are involved in the Heatox project. The Product Design and Quality Management group will analyse the reactions in which acrylamide is formed; Agrotechnology & Food Innovations will work on processes in which less acrylamide is formed, and Rikilt, the institute for food safety, will research the levels of exposure to acrylamide among the population. Twenty-three groups are involved in the whole project.
